Trattoria da Burde
A trattoria that opened as a fiaschetteria in 1901 and now sits well outside the walls, which is exactly why the room is full of Florentines and almost nobody else.

- Go for
- A trattoria that Italian food writers rank at the top in Florence, far enough out that almost every table is local.
- Skip if
- You are without a car or patience for a bus. This is not a walk from the centre.
What everybody agrees on
Read across public reviews on Google and TripAdvisor plus Italian food writing in September 2026, where it is repeatedly named alongside Sabatino as the city's best trattoria.
- Most
Italian writers name it and Sabatino in the same breath when ranking Florentine trattorias.
- Most
Friday is the day. Baccalà brings people out from the centre and the room fills with regulars.
- Often
The distance is the reason it stayed local. Very few visitors make the trip.
- Some
The setting is plain. People come for the cooking and the room, not for a view.
What to order
Go on a Friday and order the baccalà. On any other day, ask what the kitchen is proud of that week.
Before you go
- Getting there
- Northwest of the centre, out past Novoli. Bus or car rather than on foot.
- Best day
- Friday.
- Booking
- Call ahead, particularly for Friday lunch.
It started on Via di Peretola and moved to Via Pistoiese in 1927. Cooking of the outer suburbs rather than the centre: ribollita, pappa al pomodoro, bistecca, fresh pasta made daily. You need a bus or a car to get here, and that filter is the whole point. One of the few places in the city where the room would look the same if no visitors existed at all.
